- 1 cup Chardonnay
- 5 cups hot chicken broth
- 1 cup frozen peas (thawed)
- 1 cup Parmesan cheese (shredded)
- 4 oz mozzarella cheese (cubed)
- 1 cup all-purpose flour
- 3 large eggs (beaten)
- 1.5 cups Italian breadcrumbs
- Oil for frying
Instructions
- Heat olive oil and butter in a Dutch oven over medium-high heat. Sauté diced onion until soft; add ham and cook for an additional two minutes.
- Stir in Jasmine rice, then add Chardonnay until mostly evaporated. Pour in hot chicken broth, cover, and simmer until absorbed.
- Spread the cooked mixture on a baking sheet to cool. Mix in peas, parsley, and Parmesan cheese once cooled.
