- ½ cup unsalted butter (room temperature)

- 2 cups all-purpose flour
- 1 tablespoon honey
- Rose sugar (for coating)
- ¼ cup granulated sugar
- ¼ cup light brown sugar, packed
- 2 teaspoons cinnamon
- 1 tablespoon cornstarch
- ½ cup unsalted butter, melted
- ⅓ cup granulated sugar
- 3 large egg yolks, room temperature
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon kosher salt
Instructions
- Prepare rose sugar by pulsing granulated sugar with dried roses in a food processor until fine. Set aside.
- Make the pistachio filling by grinding pistachios and mixing with brown sugar, cinnamon, cornstarch, honey, and melted butter.
- Cream room temperature butter with sugars until fluffy. Add egg yolks and vanilla; mix well.
- Combine dry ingredients into the creamed mixture until just mixed.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Portion dough using a cookie scoop; flatten each piece, add filling, and roll into balls coated in rose sugar.
