  • ¼ cup dried edible roses
  • ½ cup unsalted butter (room temperature)
  • ½ cup light brown sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 tablespoon honey
  • Rose sugar (for coating)
  • ¼ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • 2 teaspoons cinnamon
  • 1 tablespoon cornstarch
  • ½ cup unsalted butter, melted
  • ⅓ cup granulated sugar
  • 3 large egg yolks, room temperature
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt

Instructions

  1. Prepare rose sugar by pulsing granulated sugar with dried roses in a food processor until fine. Set aside.
  2. Make the pistachio filling by grinding pistachios and mixing with brown sugar, cinnamon, cornstarch, honey, and melted butter.
  3. Cream room temperature butter with sugars until fluffy. Add egg yolks and vanilla; mix well.
  4. Combine dry ingredients into the creamed mixture until just mixed.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Portion dough using a cookie scoop; flatten each piece, add filling, and roll into balls coated in rose sugar.
  7. Flatten slightly before baking for 8–10 minutes until edges set.
