Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, smashed and sliced
- 1 tablespoon taco seasoning
- 1 teaspoon Cajun seasoning
- 1 cup red enchilada sauce
- 1 cup corn
- 1 cup black beans
- 1 cup diced tomatoes
- 1 bag Fritos (approximately 10.5 oz)
- 3 cups shredded cheese (cheddar or Monterey Jack)
- Fresh parsley for garnish
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked, then set aside.
- In the same skillet, heat olive oil and sauté diced onion until translucent (about 3 minutes). Add garlic and cook for an additional minute.
- Return the ground beef to the skillet; add taco seasoning, Cajun seasoning, enchilada sauce, corn, black beans, and diced tomatoes. Simmer for about 2-3 minutes.
- Preheat the oven to 350°F (175°C). Spread half of the Fritos in a greased casserole dish and sprinkle with one cup of shredded cheese.
- Pour the beef mixture over the layer of Fritos and cheese, then top with remaining Fritos and another layer of cheese.
