Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)
  • 4 (8 oz) blocks cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup cotton candy (torn into small pieces)
  • For topping: 1/2 cup heavy cream
  • 2 tablespoons powdered sugar
  • additional cotton candy for garnish

Instructions

  1. Preheat the oven to 325°F. Mix graham cracker crumbs, sugar, and melted butter in a bowl until moistened.
  2. Press the mixture into the bottom of a springform pan and bake for about 10 minutes until lightly golden. Set aside to cool.
  3. In a large mixing bowl, beat softened cream cheese until smooth. Add sugar and mix well. Incorporate sour cream and flour until smooth.
  4. Add eggs one at a time, mixing well after each addition, then gently stir in vanilla extract and cotton candy pieces.
  5. Pour filling over the cooled crust and smooth the top with a spatula. Bake for 60-70 minutes until mostly set with a slight jiggle in the center.
  6. Turn off the oven and crack open the door; let the cheesecake cool slowly for one hour.
  7. Refrigerate for at least four hours or overnight before serving.
  8. Whip heavy cream with powdered sugar until stiff peaks form; spread or pipe over cheesecake before garnishing with fresh cotton candy.
