  • 1 lb boneless skinless chicken breasts
  • ½ cup heavy cream
  • ½ cup shredded Asiago cheese
  • 2 cups mushrooms, halved
  • 1½ cups dry white wine (or chicken broth)
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 2 garlic cloves, minced
  • 1 tsp onion powder
  • 1 tsp dried parsley
  • ½ cup flour
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Pound chicken to ¼-inch thickness and cut into tenders. Dredge in flour.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sauté chicken until golden brown, about 4 minutes on each side. Remove from skillet.
  3. In the same skillet, add mushrooms and garlic; sauté until mushrooms are tender.
  4. Deglaze with white wine or broth, scraping up browned bits. Return chicken to the skillet and add parsley.
  5. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Remove chicken; stir in cream and cheese until melted and thickened.
  7. Return chicken to pan; heat through before serving.
