Ingredients
- 1–2 globe eggplants (approximately 2 lbs)
- 3 tablespoons extra virgin olive oil
- 2–3 tablespoons roasted tahini
- 1–2 garlic cloves, finely chopped
- 1/2 teaspoon ground cumin
- Juice of one lemon (approximately 2 1/2 tablespoons)
- Salt to taste
- Cayenne pepper to taste
- 1 tablespoon chopped parsley (for garnish)
Instructions
- Preheat oven to 400°F (204°C).
- Cut eggplants in half lengthwise and poke holes in each half with a fork. Drizzle with olive oil.
- Place cut side down on a foil-lined baking sheet and roast for 35-40 minutes until tender.
- Allow cooling for 15 minutes, then scoop out the flesh into a medium bowl.
- Add remaining ingredients (except reserved olive oil) and mash until smooth.
- Serve with pita bread or fresh veggies, drizzling with reserved olive oil before serving.
