  • 12 globe eggplants (approximately 2 lbs)
  • 3 tablespoons extra virgin olive oil
  • 23 tablespoons roasted tahini
  • 12 garlic cloves, finely chopped
  • 1/2 teaspoon ground cumin
  • Juice of one lemon (approximately 2 1/2 tablespoons)
  • Salt to taste
  • Cayenne pepper to taste
  • 1 tablespoon chopped parsley (for garnish)

Instructions

  1. Preheat oven to 400°F (204°C).
  2. Cut eggplants in half lengthwise and poke holes in each half with a fork. Drizzle with olive oil.
  3. Place cut side down on a foil-lined baking sheet and roast for 35-40 minutes until tender.
  4. Allow cooling for 15 minutes, then scoop out the flesh into a medium bowl.
  5. Add remaining ingredients (except reserved olive oil) and mash until smooth.
  6. Serve with pita bread or fresh veggies, drizzling with reserved olive oil before serving.
