  • 5 bone-in chicken thighs, skin removed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp butter (or olive oil)
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth
  • 1 ¼ cups hot water
  • Spices: paprika, dried thyme, garlic powder, onion powder, salt, black pepper
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a baking dish, spread chopped onion and minced garlic; place butter in the center and bake for about 15 minutes.
  3. While baking, mix spices to prepare the chicken rub and season both sides of the chicken thighs generously.
  4. After removing the dish from the oven, layer uncooked rice over onions and garlic.
  5. Place seasoned chicken thighs on top of the rice and pour hot broth and water around them.
  6. Cover tightly with foil and bake for 30 minutes; then remove foil and spray oil over chicken for added crispness before baking for another 20 minutes.
  7. Let it rest for five minutes before fluffing rice and garnishing with fresh parsley.
