  • ⅓ cup (80 ml) maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ⅙ tsp salt
  • 1 ½ cups (150 g) oat flour
  • ½ cup (50 g) almond flour
  • 2 tsp baking powder
  • Optional: ¼ cup (40 g) chocolate chips

Instructions

  1. Preheat the oven to 350°F (180°C). Line a loaf pan with parchment paper.
  2. In a mixing bowl, mash the ripe bananas until smooth. Add Greek yogurt, egg, maple syrup or honey, vanilla extract, ground cinnamon, and salt; mix until well combined.
  3. Gradually stir in oat flour, almond flour, and baking powder until just combined. Fold in chocolate chips if desired.
  4. Transfer the batter to the prepared loaf pan and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
