- 2 sheets puff pastry
- 5 tbsp salted butter
- 1 cup almond flour
- 1/2 cup granulated sugar
- 1 egg + 1 tbsp milk (for egg wash)
- 1/2 cup brown sugar
- 1/4 cup all-purpose flour
- 1/4 cup salted butter (melted)
- 1 tbsp molasses
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/4 tsp salt
Instructions
- Preheat oven to 375F and line baking sheets with parchment paper.
- In a medium bowl, mix softened butter, an egg, almond flour, granulated sugar, almond extract, vanilla extract, and salt until smooth for the almond filling.
- In another bowl, combine brown sugar, flour, melted butter, molasses, cinnamon, nutmeg, ginger, and salt for the gingerbread filling.
- Roll out one puff pastry sheet into a rectangle and cut in half lengthwise. Spread one quarter of each filling on one half.
- Cover with the other half of pastry and seal edges; repeat with second sheet.
- Chill assembled pastries for 15-20 minutes before baking for 28-32 minutes until golden brown.
