  • 1 tablespoon fennel seeds
  • 2 heaping tablespoons cayenne pepper
  • 1 tablespoon turmeric
  • 1 teaspoon asafetida
  • ¼ to ½ cup salt
  • 1 cup avocado oil (or mustard oil)
  • 2 tablespoons mustard seeds

Instructions

  1. Toast fenugreek, fennel, and nigella seeds in a skillet until fragrant (3–5 minutes). Cool and grind with asafetida.
  2. In a clean bowl, mix lime pieces with ground spices, cayenne, turmeric, and salt until coated.
  3. Heat oil in the same skillet; add mustard seeds until they sputter.
  4. Pour hot oil over lime mixture, stir well, and transfer to a sterilized mason jar.
  5. Place in direct sunlight for 5–7 days, turning daily for even fermentation.
  6. Refrigerate once the limes soften; enjoy for months.
