- 1 small onion, finely chopped

- 1 cup breadcrumbs
- 1 large egg
- 4 large russet potatoes
- 3 tbsp butter
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine ground beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, oregano, basil, salt, and pepper until just mixed.
- Shape the mixture into a loaf and place it on a baking sheet or in a loaf pan. Bake for 40–45 minutes until the internal temperature reaches 160°F (71°C).
- While the meatloaf is baking, scrub and pierce the potatoes with a fork. Bake for about 45 minutes until soft.
- Cut baked potatoes in half and scoop out the flesh into a bowl. Mash with butter, sour cream, salt, pepper, cheddar cheese, and green onions.
- Stuff potato skins with the filling and top with extra cheese. Bake for an additional 5–10 minutes until melted.
