  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 large egg
  • 4 large russet potatoes
  • 3 tbsp butter
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine ground beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, oregano, basil, salt, and pepper until just mixed.
  3. Shape the mixture into a loaf and place it on a baking sheet or in a loaf pan. Bake for 40–45 minutes until the internal temperature reaches 160°F (71°C).
  4. While the meatloaf is baking, scrub and pierce the potatoes with a fork. Bake for about 45 minutes until soft.
  5. Cut baked potatoes in half and scoop out the flesh into a bowl. Mash with butter, sour cream, salt, pepper, cheddar cheese, and green onions.
  6. Stuff potato skins with the filling and top with extra cheese. Bake for an additional 5–10 minutes until melted.
