- 2 lbs ground beef
- 4 green onions, finely chopped
- 2 inches fresh ginger, grated
- 6 cloves garlic, minced
- 1 head broccoli, cut into florets
- 1 cup low-sodium soy sauce
- 1 cup brown sugar
- 1 Tbsp olive oil
- Kosher salt & black pepper, to taste
- 1 Tbsp vegetable oil
- ⅔ cup water
- 1 Tbsp rice wine vinegar
- ½ tsp red pepper flakes
- 2 Tbsp cornstarch, whisked with ½ cup water
- 3 green onions, thinly sliced for garnish
- Sesame seeds for garnish
Instructions
- Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
- In a large bowl, mix ground beef, chopped green onions, grated ginger, and minced garlic. Season with salt and pepper.
- Roll the mixture into tablespoon-sized meatballs and place on one side of the baking sheet.
- Toss broccoli florets with olive oil, salt, and pepper; spread them on the other half of the baking sheet.
- Bake for about 15 minutes until meatballs are cooked through and broccoli is tender.
- In a skillet, heat vegetable oil over medium-high heat and combine soy sauce, brown sugar, garlic, ginger, water, rice wine vinegar, and red pepper flakes; let simmer for about 10 minutes.
- Stir in cornstarch slurry until sauce thickens; remove from heat.
- Toss cooked meatballs in the sauce until well-coated and serve over rice or noodles garnished with sliced green onions and sesame seeds.
