  • 2 lbs ground beef
  • 4 green onions, finely chopped
  • 2 inches fresh ginger, grated
  • 6 cloves garlic, minced
  • 1 head broccoli, cut into florets
  • 1 cup low-sodium soy sauce
  • 1 cup brown sugar
  • 1 Tbsp olive oil
  • Kosher salt & black pepper, to taste
  • 1 Tbsp vegetable oil
  • ⅔ cup water
  • 1 Tbsp rice wine vinegar
  • ½ tsp red pepper flakes
  • 2 Tbsp cornstarch, whisked with ½ cup water
  • 3 green onions, thinly sliced for garnish
  • Sesame seeds for garnish

Instructions

  1. Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix ground beef, chopped green onions, grated ginger, and minced garlic. Season with salt and pepper.
  3. Roll the mixture into tablespoon-sized meatballs and place on one side of the baking sheet.
  4. Toss broccoli florets with olive oil, salt, and pepper; spread them on the other half of the baking sheet.
  5. Bake for about 15 minutes until meatballs are cooked through and broccoli is tender.
  6. In a skillet, heat vegetable oil over medium-high heat and combine soy sauce, brown sugar, garlic, ginger, water, rice wine vinegar, and red pepper flakes; let simmer for about 10 minutes.
  7. Stir in cornstarch slurry until sauce thickens; remove from heat.
  8. Toss cooked meatballs in the sauce until well-coated and serve over rice or noodles garnished with sliced green onions and sesame seeds.
