  • 60g sugar crystals

Instructions

  2. Rinse and simmer the oranges in a pot for about two hours until soft. Blend them into a smooth puree after cooling.
  3. In a mixing bowl, beat eggs until fluffy, then fold in orange puree, sugar, ground almonds, baking soda, and minced fresh ginger.
  4. Incorporate candied ginger pieces gently into the batter.
  5. Pour into the prepared pan and bake for 45 minutes or until golden brown and set.
  6. Cool on a wire rack before frosting with a mixture of lemon zest, juice, and sugar crystals.
