  • 2 red snapper fillets
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 2 tbsp butter
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 2 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 1 tsp hot sauce (optional)
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a saucepan, bring chicken broth to a boil. Gradually whisk in grits and cook on low heat for 20-25 minutes. Mix in heavy cream, butter, cheese, salt, and pepper.
  2. Season shrimp with Cajun seasoning. Heat olive oil and butter in a skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink; set aside.
  3. Pat snapper dry, season with Cajun seasoning, and sear in the same skillet until crispy (about 3-4 minutes per side). Set aside.
  4. In the skillet, melt butter, sauté garlic, add seasoning, broth, heavy cream, and simmer. Stir in Parmesan cheese until smooth.
  5. To serve: Spoon grits onto plates, top with snapper and shrimp, then drizzle with Cajun cream sauce.
