  • 3 cloves garlic, crushed
  • ½ small bunch fresh rosemary
  • 1 lemon (zest only)
  • 2 tbsp olive oil
  • 2kg (4.5 lbs) leg of lamb
  • Salt (to taste)
  • 20g fresh mint leaves
  • 1 tsp honey
  • 1 tsp salt (for mint sauce)
  • 2 tbsp white wine vinegar
  • 4 tbsp olive oil (for mint sauce)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mortar and pestle, combine chopped rosemary, crushed garlic, salt, lemon zest, and olive oil to form a paste. Rub all over the leg of lamb.
  3. Place the seasoned lamb in a roasting pan and roast for about 1 hour and 15 minutes for medium-rare or 1 hour and 30 minutes for well-done.
  4. While the lamb cooks, blend mint leaves with honey, salt, hot water, white wine vinegar, and olive oil in a food processor until smooth.
  5. After roasting, rest the lamb covered loosely with foil for about 20 minutes before slicing. Serve with mint sauce on the side.
