Ingredients
- 1 (3-pound) corned beef brisket
- 1 tablespoon pickling spices
- 2 teaspoons granulated sugar
- 1/2 teaspoon kosher salt
- 3 sprigs fresh thyme
- 1 (8-ounce) bottle lager or brown ale
- 6 to 8 cups water
- 1 tablespoon apple cider vinegar
- 4 large carrots, peeled and cut into 2-inch pieces
- 1 pound small waxy potatoes, halved if larger than 1-inch
- 1 small yellow onion, cut into wedges
- 1 pound savoy cabbage, cut into wedges
Instructions
- Preheat your slow cooker to the LOW setting.
- Place the brisket fat-side up in the slow cooker and sprinkle with pickling spices, sugar, and salt. Pour in the beer and enough water to cover the brisket. Add vinegar and stir gently.
- Scatter carrots, potatoes, onions, and thyme over the brisket.
- Cover and cook on LOW for 8 to 10 hours or HIGH for 4 to 5 hours until meat is tender.
