  • 2 large eggs
  • 150 grams plain flour
  • 1/2 teaspoon salt
  • 125 milliliters water
  • 200 grams thick Greek yogurt
  • 2 tablespoons grated Gruyere or Kefalotyri cheese
  • 100 grams crumbled feta cheese
  • 250 grams fresh spinach, finely chopped and stems removed
  • 50 grams feta cheese, roughly crumbled
  • 1 tablespoon chopped parsley
  • 2 small spring onions, minced (green parts too)
  • 1 tablespoon chopped dill

Instructions

  1. Preheat oven to 190°C (375°F). Grease a round baking pan.
  2. In a mixing bowl, blend yogurt until smooth; add eggs, olive oil, and water.
  3. Gradually stir in salt and flour until smooth; gently fold in crumbled feta.
  4. Chop spinach and mix with spring onions, parsley, dill, salt, and pepper.
  5. Pour half the batter into the pan; layer spinach mixture and additional feta on top.
  6. Spoon remaining batter over spinach; sprinkle with Gruyere cheese.
  7. Bake for 70 minutes until golden brown.
