- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3/4 – 1 lb ground Italian sausage
- 3/4 – 1 lb ground beef
- 24 oz marinara sauce
- 32 oz ricotta cheese
- 2 eggs
- 1 cup cooked spinach, drained and chopped
- 2 cups shredded mozzarella cheese
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the jumbo shells according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add diced bell peppers and sauté until softened. Add ground sausage and beef; cook until browned. Stir in marinara sauce and seasonings; simmer briefly.
- In a mixing bowl, combine ricotta cheese, chopped spinach, eggs, mozzarella, and seasonings; mix well.
- Stuff each shell with the ricotta mixture and place in a baking dish layered with meat sauce.
