  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3/41 lb ground Italian sausage
  • 3/41 lb ground beef
  • 24 oz marinara sauce
  • 32 oz ricotta cheese
  • 2 eggs
  • 1 cup cooked spinach, drained and chopped
  • 2 cups shredded mozzarella cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the jumbo shells according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced bell peppers and sauté until softened. Add ground sausage and beef; cook until browned. Stir in marinara sauce and seasonings; simmer briefly.
  4. In a mixing bowl, combine ricotta cheese, chopped spinach, eggs, mozzarella, and seasonings; mix well.
  5. Stuff each shell with the ricotta mixture and place in a baking dish layered with meat sauce.
  6. Pour remaining meat sauce over the shells, cover with foil, and bake for 20 minutes. Remove foil, sprinkle additional mozzarella on top, increase heat to 375°F (190°C), and bake uncovered for another 15 minutes or until bubbly.
