Ingredients
- 120g glutinous rice flour
- 250g milk (divided)
- 240g all-purpose flour
- 90g unsalted butter, melted
- 160g granulated sugar (divided)
- 2½ tbsp ground Thai tea
- 2 eggs
- 1 tsp vanilla extract
- Powdered sugar (for dusting)
Instructions
- In a microwave-safe bowl, combine glutinous rice flour, 35g granulated sugar, and 250g milk. Cover and microwave for 1 minute. Stir and microwave for an additional minute. Mix in coconut oil and let cool.
- Dust a surface with cornstarch. Knead cooled mochi, divide into 12 portions, and coat each with cornstarch.
- Grind Thai tea leaves into fine powder; mix with remaining milk to steep.
- Whisk together all-purpose flour, baking powder, and salt in one bowl; mix melted butter with remaining sugar, eggs, vanilla extract, and Thai tea milk in another.
- Combine mixtures and refrigerate dough for at least 2 hours.
- Preheat oven to 350°F (180°C). Shape chilled dough around mochi pieces into balls, roll in granulated sugar followed by powdered sugar.
- Bake for 12–15 minutes until tops crack; cool before serving.
