Ingredients
  

For the Marinade
  • 4 leg quarters Chicken Can substitute with chicken thighs or breasts.
  • 1 teaspoon Salt
  • 1 tablespoon Ginger Minced
  • 1 tablespoon Garlic Minced
  • 2 tablespoons Lemon juice Lime juice is a suitable substitute.
  • 1 teaspoon Smoked paprika Regular paprika can also be used.
  • 1 cup Plain yogurt Greek yogurt can add a creamier texture.
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Red chili powder Adjust for a milder taste.
  • 1 teaspoon Kashmiri chili powder Can be omitted for a lighter appearance.
  • 1 teaspoon Crushed red pepper flakes Adjust to taste.
  • 1 drop Deep orange food color Optional
  • 1 teaspoon Garam masala
  • 1 teaspoon Ground cumin
  • 2 tablespoons Cooking oil Olive or vegetable oil works well.
Optional Butter Glaze
  • 2 tablespoons Butter Brush melted butter mixed with garlic powder and cilantro post-cooking.

Method
 

Preparation Steps
  1. Pat the chicken leg quarters dry with paper towels and make deep diagonal cuts on both sides.
  2. Mix salt, minced ginger, minced garlic, lemon juice, and smoked paprika for the first marinade. Rub onto the chicken and let it marinate for 10-15 minutes.
  3. For the second marinade, whisk together yogurt, salt, turmeric, red chili powder, Kashmiri chili powder, crushed red pepper flakes, food color, garam masala, ground cumin, and cooking oil. Coat the chicken and refrigerate for 2-3 hours or overnight.
  4. Take the marinated chicken out of the refrigerator to take the chill off. Preheat your air fryer to 180°C (350°F).
  5. Place the marinated chicken in the air fryer and cook for 13-15 minutes. Flip chicken and increase temperature to 190°C (375°F). Cook for additional 8-10 minutes or until charred.
  6. Remove the chicken from the air fryer and let it rest for about 5 minutes before serving.
