Preparation Steps
- Pat the chicken leg quarters dry with paper towels and make deep diagonal cuts on both sides.
- Mix salt, minced ginger, minced garlic, lemon juice, and smoked paprika for the first marinade. Rub onto the chicken and let it marinate for 10-15 minutes.
- For the second marinade, whisk together yogurt, salt, turmeric, red chili powder, Kashmiri chili powder, crushed red pepper flakes, food color, garam masala, ground cumin, and cooking oil. Coat the chicken and refrigerate for 2-3 hours or overnight.
- Take the marinated chicken out of the refrigerator to take the chill off. Preheat your air fryer to 180°C (350°F).
- Place the marinated chicken in the air fryer and cook for 13-15 minutes. Flip chicken and increase temperature to 190°C (375°F). Cook for additional 8-10 minutes or until charred.
- Remove the chicken from the air fryer and let it rest for about 5 minutes before serving.
