- Preheat your oven to 375°F (190°C). Prepare a loaf pan or baking sheet lined with parchment paper for easy cleanup.
- In a large mixing bowl, combine the ground beef, ground pork, panko breadcrumbs, eggs, green onions, garlic, and ginger. Add soy sauce, sesame oil, and brown sugar; season with salt and pepper, mixing gently until combined.
- Transfer the meat mixture to the prepared loaf pan or shape into a loaf on the baking sheet. Ensure it's compact but not overly pressed.
- In a small bowl, mix half of the teriyaki sauce with an additional tablespoon of brown sugar. Brush this glaze over the top of the meatloaf.
- Bake the meatloaf for 45-55 minutes until the internal temperature reaches 160°F (70°C) and the top is golden-brown.
- In the last 10 minutes of baking, brush the remaining teriyaki sauce over the meatloaf for added flavor and shine.
