Method
 

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F).
  2. Cut off the stems of each zucchini and slice them in half lengthwise.
  3. Carefully scoop out the flesh, leaving about a 1/4-inch border for the shell.
  4. Chop the reserved zucchini flesh into small pieces.
  5. Heat olive oil in a skillet over medium heat and sauté onion and garlic for about 3-4 minutes.
  6. Add chopped zucchini flesh to the skillet and cook for an additional 5 minutes.
  7. Transfer the mixture to a bowl and stir in mozzarella, parmesan, fresh herbs, and breadcrumbs.
  8. Stuff each zucchini shell with the prepared filling.
  9. Place the stuffed zucchini halves in a baking dish and add extra cheese on top if desired.
  10. Bake for 25-30 minutes until edges are caramelized and filling is bubbly.
  11. Remove from oven and let them rest for 5 minutes before serving.
