Ingredients
  

Chicken and Base
  • 1 pound boneless, skinless chicken breasts or thighs for more flavor
  • 2 cups cooked rice white or brown, quinoa or cauliflower rice can be substituted
Vegetables
  • 1 cup broccoli florets or green beans/snap peas as substitutes
  • 1 medium red bell pepper can swap with yellow or orange
  • 1 medium carrot julienned; frozen mixed veggies can be used
  • 2 stalks green onions or chives for a milder flavor
Sauce and Seasoning
  • 1/2 cup mayonnaise or Greek yogurt for a lighter option
  • 1/4 cup sweet chili sauce or substitute with honey/agave
  • 1-2 tablespoons Sriracha sauce adjust according to spice preference
  • 2 tablespoons soy sauce tamari for gluten-free option

  • 1 tablespoon oil for cooking, use canola or avocado oil
  • 1 tablespoon sesame seeds for garnishing

Method
 

Preparation
  1. Cut the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat oil in a skillet over medium heat, add chicken, and sauté for 5-7 minutes until golden brown and cooked through.
  3. In the same skillet, sauté broccoli, red bell pepper, and carrot for 3-5 minutes until tender.
  4. In a mixing bowl, combine mayonnaise, sweet chili sauce, Sriracha, and soy sauce to create the sauce.
  5. Return chicken to the skillet, pour sauce over chicken and vegetables, and heat through for 2-3 minutes.
  6. Prepare rice in serving bowls. Spoon the chicken and vegetable mixture over the rice.
  7. Garnish with chopped green onions and sesame seeds before serving.
