For the Creamy Dressing
  • 1 cup Plain Greek Yogurt Use dairy-free yogurt for a vegan option.
  • 1 juice of Fresh Lemon Juice Always use fresh.
  • 1 tbsp Mustard Any type between yellow, Dijon, or whole grain.
  • 1/4 cup Extra Virgin Olive Oil Select a high-quality oil.
  • 1/4 cup Fresh Herbs (Mint, Parsley, Oregano) Fresh herbs are key.
  • 1/2 tsp Coarse Salt
  • 1/2 tsp Ground Black Pepper

Method
 

Preparation Steps
  1. Combine the Greek yogurt, lemon juice, mustard, olive oil, and fresh herbs in a blender. Blend until smooth, about 30 seconds.
  2. Season with salt and pepper to taste, then set the dressing aside.
  3. In a large mixing bowl, add the super greens mix and kale. Mix gently until combined.
  4. Fold in the strawberries, blackberries, and blueberries, being careful not to crush them.
  5. Sprinkle the pistachios and pepitas over the salad and toss lightly.
  6. Drizzle the dressing over the salad and gently toss to coat.
  7. Garnish with ground pepper if desired and serve immediately.
