- Rinse canned chickpeas thoroughly or soak dried chickpeas overnight. Combine chickpeas with baking soda and water in a saucepan. Bring to a boil, then simmer for 15–20 minutes until soft.
- Drain chickpeas in a fine-mesh strainer and rinse well to remove baking soda taste.
- In a food processor, add tahini, lemon juice, olive oil, garlic, cumin, and salt. Blend for 2 minutes, scraping sides as needed.
- Add rinsed chickpeas and ice cubes to the processor. Blend for 4 minutes, pausing to scrape sides. Adjust consistency with water if needed.
- Taste and adjust flavors with more salt or lemon juice. Serve hummus drizzled with olive oil and garnished with paprika or herbs.
