  • 2 cloves Garlic freshly minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Salt to taste

  • 1 teaspoon Paprika
  • 1/4 cup Fresh Herbs such as parsley or cilantro, chopped
  • 1 teaspoon Chili Flakes

Method
 

Step-by-Step Instructions
  1. Rinse canned chickpeas thoroughly or soak dried chickpeas overnight. Combine chickpeas with baking soda and water in a saucepan. Bring to a boil, then simmer for 15–20 minutes until soft.
  2. Drain chickpeas in a fine-mesh strainer and rinse well to remove baking soda taste.
  3. In a food processor, add tahini, lemon juice, olive oil, garlic, cumin, and salt. Blend for 2 minutes, scraping sides as needed.
  4. Add rinsed chickpeas and ice cubes to the processor. Blend for 4 minutes, pausing to scrape sides. Adjust consistency with water if needed.
  5. Taste and adjust flavors with more salt or lemon juice. Serve hummus drizzled with olive oil and garnished with paprika or herbs.
