Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare sweet potatoes by washing and piercing them with a fork.
  2. Bake the sweet potatoes for 45-50 minutes until fork-tender and caramelized.
  3. In a mixing bowl, combine black beans, diced avocado, red onion, cilantro, lime juice, cumin, paprika, salt, and pepper to make the filling.
  4. Once baked, cut the sweet potatoes lengthwise and fluff the insides with a fork.
  5. Scoop the filling into each sweet potato half and top with cheese if desired.
  6. Return stuffed sweet potatoes to the oven for an additional 5 minutes to melt the cheese.
