Step-by-Step Instructions for Bomb Meatloaf
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, egg, diced onions, oats, ketchup, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix thoroughly for about 5 minutes without overmixing.
  3. Shape the mixture into a loaf approximately 2 inches high and 8 inches long on the prepared baking sheet.
  4. In a separate bowl, whisk together brown sugar, apple cider vinegar, garlic powder, and onion powder. Save one-third of the glaze for later.
  5. Brush one-third of the glaze over the meatloaf, and bake it in the oven for 30 minutes.
  6. After 30 minutes, increase the oven temperature to 400°F (200°C) and brush the remaining glaze over the meatloaf. Bake for an additional 15 minutes.
  7. Check the internal temperature; it should read 160°F (70°C). If needed, bake a few more minutes.
  8. Once done, let the meatloaf rest for 10 minutes, slice, and serve garnished with chopped parsley.
