Zucchini

Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine Greek yogurt, minced garlic, lemon juice and zest, and a pinch of salt and pepper. Stir until well blended.
  2. Smash each zucchini on a cutting board using a rolling pin into large chunks.
  3. Transfer zucchini to a mixing bowl, drizzle with olive oil, and toss with salt and pepper.
  4. Preheat oven to broil at 550°F. Spread seasoned zucchini on a lined baking sheet and broil for 5-7 minutes.
  5. Spread yogurt sauce on a serving platter, arrange charred zucchini on top, and add pecorino and crushed red pepper.
