Preparation Steps
- Preheat your oven to 350°F (175°C) and lightly oil a 10-inch cast iron skillet.
- In a large mixing bowl, combine the lean ground beef, 1/2 cup taco sauce, 1/3 cup crushed Doritos, taco seasoning, finely diced onion, cumin, lemon pepper, garlic powder, Mexican oregano, and beaten eggs. Mix thoroughly.
- Press half of the meat mixture into the prepared skillet, smoothing it out and creating a well in the center.
- Layer the sliced pepper-jack cheese evenly over the meat mixture.
- Spread the remaining meat mixture over the cheese layer, smoothing the top.
- Spread the remaining 1/2 cup of taco sauce over the top of the meatloaf.
- Bake for 40 minutes, checking for doneness.
- After 40 minutes, pour an additional 1/2 cup of taco sauce, sprinkle shredded cheese and remaining crushed Doritos on top, then return to oven for another 20-30 minutes.
- Once fully cooked, let the meatloaf rest for 10 minutes before slicing and serving.
