Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and lightly oil a 10-inch cast iron skillet.
  2. In a large mixing bowl, combine the lean ground beef, 1/2 cup taco sauce, 1/3 cup crushed Doritos, taco seasoning, finely diced onion, cumin, lemon pepper, garlic powder, Mexican oregano, and beaten eggs. Mix thoroughly.
  3. Press half of the meat mixture into the prepared skillet, smoothing it out and creating a well in the center.
  4. Layer the sliced pepper-jack cheese evenly over the meat mixture.
  5. Spread the remaining meat mixture over the cheese layer, smoothing the top.
  6. Spread the remaining 1/2 cup of taco sauce over the top of the meatloaf.
  7. Bake for 40 minutes, checking for doneness.
  8. After 40 minutes, pour an additional 1/2 cup of taco sauce, sprinkle shredded cheese and remaining crushed Doritos on top, then return to oven for another 20-30 minutes.
  9. Once fully cooked, let the meatloaf rest for 10 minutes before slicing and serving.
