Burger Sauce
  • 1/2 cup Mayo
  • 1 medium Grated Onion
  • 1/4 cup Ketchup
  • 2 tablespoons Pickle Relish
  • 1 tablespoon Yellow Mustard
  • 1 tablespoon White Vinegar
  • 1 teaspoon Paprika
Quesadilla
  • 1 pound Lean Ground Beef
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Garlic Powder
  • 1 tablespoon Worcestershire Sauce
  • 4 large Burrito-Sized Flour Tortillas
  • 8 slices Cheddar Cheese
  • 1/2 cup Chopped Onion
  • 1/2 cup Pickles
  • 2 tablespoons Olive Oil

Method
 

Making the Cheeseburger Quesadilla
  1. In a mixing bowl, combine mayo, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika. Whisk together until smooth, and refrigerate for at least 15 minutes.
  2. Heat a non-stick skillet over medium-high heat, add the lean ground beef, cook and break it into pieces for about 6-8 minutes until browned. Drain excess grease, then season with salt, black pepper, garlic powder, and Worcestershire sauce.
  3. On each tortilla, lay down 2 slices of cheddar cheese, followed by the ground beef, chopped onion, and pickles. Top with 2 more slices of cheese, fold the tortilla over.
  4. Heat olive oil in the skillet, place folded quesadillas into the hot oil, cooking for 2-3 minutes on each side until golden-brown and cheese is melted.
  5. Transfer quesadillas to a cutting board, let cool for a minute, slice into triangles and serve hot with the burger sauce.
