  • 1 tbsp Lemon Juice fresh or bottled
  • 1 tsp Vanilla Extract pure
  • 1 pinch Salt
For the Wrappers
  • 12 pieces Egg Roll Wrappers available at grocery stores or Asian markets
  • 1 tbsp Water for sealing
For Frying and Coating
  • 2-3 inches Oil vegetable or canola for frying
  • 1/4 cup Sugar
  • 1 tsp Cinnamon

Method
 

Filling Preparation
  1. In a mixing bowl, beat together cream cheese, sugar, lemon juice, vanilla extract, and salt using an electric mixer for about 2-3 minutes until smooth and creamy.
Assembling Egg Rolls
  1. Take an egg roll wrapper and lay it flat. Spoon cheesecake filling onto the center, fold the bottom corner over it, then fold in the sides and roll tightly, sealing with water.
Heating Oil
  1. Pour oil into a deep pan, about 2-3 inches deep, and heat to 375°F (190°C), monitoring with a thermometer.
Frying Egg Rolls
  1. Lower 3-4 egg rolls into the oil and fry for 2-3 minutes on each side until golden brown, flipping halfway with a slotted spoon.
Coating with Sugar and Cinnamon
  1. Remove egg rolls and place on paper towels. While hot, roll in a mixture of sugar and cinnamon.
Serving
  1. Serve warm with toppings like chocolate sauce or berries and enjoy!
