  1. In a skillet over medium heat, brown 1 pound of ground beef for 8–10 minutes until fully cooked and no longer pink. Drain any excess grease, then stir in taco seasoning along with ¼ cup of water. Allow to simmer for 5 minutes.
  2. Heat a dry skillet over medium heat or microwave tortillas for 15–20 seconds until soft. Keep them covered to retain heat.
  3. Lay a tortilla flat, layer with rice, seasoned beef, nacho cheese sauce, chipotle sauce, sour cream, cheddar, and mozzarella. Fold sides and roll tightly.
  4. Heat a clean skillet over medium heat, adding butter or oil. For an extra cheesy crust, sprinkle 2 tablespoons of shredded cheese in the pan. Grill burrito seam-side down for 3–4 minutes, pressing gently. Flip and repeat until golden brown.
