For the Topping
  • 1 cup Panko Breadcrumbs
  • 2 tablespoons Butter Melted

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 1.5 quart casserole dish.
  2. Slice the zucchini into thin rounds, sprinkle with salt and let sit for 30-45 minutes.
  3. Blot the zucchini, then mix with onion, eggs, cheddar, mozzarella, parmesan, Italian seasoning, black pepper, and salt in a bowl.
  4. Layer zucchini slices in the casserole dish and pour the cheese mixture on top.
  5. Bake uncovered for 20 minutes until the cheese mixture begins to set.
  6. Mix Panko breadcrumbs with melted butter and top the casserole with the mixture.
  7. Return to the oven and bake for an additional 20 minutes until the topping is golden brown.
