Preparation Steps
- Preheat the oven to 425°F (220°C) and prepare a cookie sheet with oil spray.
- Grate the zucchini, place in a colander, and let it sit for 5 minutes to drain excess moisture.
- In a mixing bowl, combine the drained zucchini, panko, cheddar, eggs, cornstarch, seasonings, and herbs. Mix well.
- Form the mixture into uniform tots and place them on the cookie sheet.
- Lightly spray the tops of the tots with oil and bake for 18-22 minutes until golden brown.
- Let the tots cool for a couple of minutes; serve warm with dips.
