  • 1/2 cup Pecans chopped, can substitute with walnuts
  • 1 tsp Vanilla Extract or almond extract for variation
  • 1 tsp Baking Soda ensure it’s fresh
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg
  • 1/4 tsp Salt

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Mash the cooked sweet potatoes in a mixing bowl until smooth.
  3. Combine almond flour, rolled oats, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, baking soda, and salt with the mashed sweet potatoes until well mixed.
  4. Gently fold in chopped pecans and any optional add-ins like chocolate chips or dried fruit.
  5. Scoop the dough onto the baking sheet, spacing cookies about 2 inches apart.
  6. Bake for 12-15 minutes or until lightly golden around the edges.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
