  • 1/4 cup red onion julienned
  • 4 medium radishes sliced; or diced bell peppers for milder flavor
For the Dressing
  • 1 cup Greek yogurt or dairy-free yogurt to keep it vegan
  • 1/4 cup mayonnaise optional
  • 1 tablespoon horseradish mustard or Dijon mustard for milder taste
  • 1 tablespoon honey or maple syrup/agave for vegan option
  • 2 tablespoons lemon juice or lime juice
  • 1 clove garlic minced
  • 2 tablespoons fresh dill or parsley/cilantro as substitutes
  • 1 teaspoon salt adjust according to taste
  • 1/4 teaspoon pepper adjust according to taste
  • 1/4 teaspoon chili flakes optional for spice

Method
 

Preparation
  1. Wash the baby cucumbers and radishes, then slice the cucumbers into thin rounds, julienne the red onion, and cut the radishes into thin slices.
  2. In a medium mixing bowl, combine Greek yogurt, mayonnaise (if using), horseradish mustard, honey, lemon juice, minced garlic, and fresh dill. Stir until smooth and creamy, seasoning with salt, pepper, and optional chili flakes.
  3. Add the sliced cucumbers, radishes, red onion, and corn to the bowl. Gently toss until well-coated.
  4. Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least 30 minutes.
  5. After chilling, toss the salad gently again before serving and garnish with additional fresh dill, if desired.
