  • 1 Bell Pepper any color, diced
  • 1 cup Shredded Cheddar Cheese or Monterey Jack or Pepper Jack
  • 2 cups Fritos add just before serving
For the Dressing
  • 1 cup Sour Cream or Greek yogurt
  • 3 tablespoons Extra Virgin Olive Oil
  • to taste Salt & Pepper
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Ground Cumin

Step-by-Step Instructions
  1. In a small bowl, combine sour cream, olive oil, salt, pepper, garlic powder, onion powder, and ground cumin. Whisk together until smooth and creamy, then set aside.
  2. In a large mixing bowl, add sweet corn, black beans, Rotel tomatoes, diced bell pepper, and shredded cheddar cheese. Mix everything evenly.
  3. Pour the dressing over the salad mixture. Using a spatula, gently stir until everything is evenly coated.
  4. Add Fritos just before serving and carefully fold them in.
