- Begin by cutting the chicken breasts in half to create thinner cutlets that will cook quickly. Season both sides generously with garlic powder and lemon pepper.
- Heat a large skillet over medium-high heat and add olive oil along with a tablespoon of butter. Sear the seasoned chicken cutlets for 5-6 minutes on each side.
- Reduce the heat to medium, then add the minced garlic to the same skillet and cook for about 30 seconds.
- Stir in the chicken broth and lemon juice, bring to a simmer, then add heavy cream and potato gnocchi. Cook for 5-7 minutes.
- Stir in grated parmesan cheese and fresh baby spinach, mix until spinach is wilted and cheese melted. Return sliced chicken to skillet and toss to combine.
