  • 1/2 cup Parmesan Cheese (grated) nutritional yeast can be a dairy-free substitute
For the Gnocchi
  • 1 pound Potato Gnocchi store-bought or homemade works great
  • 2 cups Fresh Baby Spinach kale or arugula can be used instead
Seasonings
  • to taste Salt & Pepper adjust according to your preference

Step-by-Step Instructions
  1. Begin by cutting the chicken breasts in half to create thinner cutlets that will cook quickly. Season both sides generously with garlic powder and lemon pepper.
  2. Heat a large skillet over medium-high heat and add olive oil along with a tablespoon of butter. Sear the seasoned chicken cutlets for 5-6 minutes on each side.
  3. Reduce the heat to medium, then add the minced garlic to the same skillet and cook for about 30 seconds.
  4. Stir in the chicken broth and lemon juice, bring to a simmer, then add heavy cream and potato gnocchi. Cook for 5-7 minutes.
  5. Stir in grated parmesan cheese and fresh baby spinach, mix until spinach is wilted and cheese melted. Return sliced chicken to skillet and toss to combine.
