  • 1 clove Garlic peeled
  • 2 tablespoons Olive Oil extra virgin preferred
  • 1 juice Lemon fresh is best
  • 2-3 tablespoons Ice Water for desired consistency
  • to taste Salt adjust to preference

  1. Rinse the chickpeas thoroughly under cool running water for about 30 seconds to eliminate any residual canned flavor.
  2. In a large food processor, add the drained chickpeas, tahini, garlic, olive oil, lemon juice, and a pinch of salt. Pulse for about 30 seconds.
  3. Blend on high speed for 1-2 minutes until smooth, scraping down the sides as needed. If too thick, drizzle in ice water while blending.
  4. Taste and adjust seasoning, blending again for another 30 seconds to fully incorporate any adjustments.
  5. Transfer to a serving bowl, drizzle with olive oil, and serve with warm pita or fresh veggies.
