For the Salad
  • 1 cup Strawberries Ripe and firm
  • 1 large Cucumber English or Persian variety
  • ½ cup Feta or Goat Cheese Optional, crumbled
  • to taste Fresh Herbs (Mint or Basil) For flavor
  • to taste Slivered Almonds or Walnuts Optional, toasted
For the Dressing
  • 2 tablespoons Lemon Juice or Balsamic Vinegar
  • 1 tablespoon Honey or Maple Syrup
  • 3 tablespoons Olive Oil
  • to taste Salt
  • to taste Black Pepper

Method
 

Preparation
  1. Wash and dry 1 cup of strawberries and 1 large cucumber. Hull the strawberries and slice them into quarters, and slice the cucumber into rounds or half-moons. Set aside in a mixing bowl.
  2. In a small bowl, combine the dressing ingredients: 2 tablespoons lemon juice, 1 tablespoon honey, 3 tablespoons olive oil, and a pinch of salt and black pepper. Whisk together until well combined.
  3. In the large mixing bowl, add ½ cup of crumbled feta or goat cheese, along with fresh herbs. Toss gently to combine.
  4. Drizzle half of the dressing over the salad and gently toss to coat. Be careful not to crush the fruit.
  5. Transfer to a serving platter, sprinkle with toasted nuts if desired, and drizzle with remaining dressing before serving.
