Preparation
- Wash and dry 1 cup of strawberries and 1 large cucumber. Hull the strawberries and slice them into quarters, and slice the cucumber into rounds or half-moons. Set aside in a mixing bowl.
- In a small bowl, combine the dressing ingredients: 2 tablespoons lemon juice, 1 tablespoon honey, 3 tablespoons olive oil, and a pinch of salt and black pepper. Whisk together until well combined.
- In the large mixing bowl, add ½ cup of crumbled feta or goat cheese, along with fresh herbs. Toss gently to combine.
- Drizzle half of the dressing over the salad and gently toss to coat. Be careful not to crush the fruit.
- Transfer to a serving platter, sprinkle with toasted nuts if desired, and drizzle with remaining dressing before serving.
