Step-by-Step Instructions
  1. Heat the skillet by pouring 2 tablespoons of olive oil into a large non-stick skillet over medium heat for about 1-2 minutes until shimmering.
  2. Sauté the vegetables by adding ½ cup of chopped onion and ½ cup of chopped bell pepper to the skillet for about 1-2 minutes.
  3. Cook the shrimp by stirring in 1 pound of uncooked shrimp and 2 tablespoons of taco seasoning for an additional 1-2 minutes.
  4. Assemble the quesadillas by placing a medium flour tortilla into the skillet, adding cheese and the shrimp mixture, topping with more cheese.
  5. Cook until crispy by folding the tortilla and cooking for approximately 2-3 minutes on each side until golden-brown.
