  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika Regular paprika can be used for milder flavor
  • 2 cups Black Beans Canned for convenience
  • 1/2 cup Vegetable Broth Water can be used if necessary
  • 2 tablespoons Lime Juice Can substitute with lemon juice
For the Tacos
  • 8 small Corn Tortillas Flour tortillas can be substituted
  • 1 cup Pepper Jack or Melty Cheese Use dairy-free cheese for vegan
  • to taste Kosher Salt
  • to taste Ground Black Pepper

Method
 

Step by Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Sauté diced yellow onion and a pinch of kosher salt for 3-4 minutes.
  3. Add minced garlic and crumbled chipotle pepper, cook for an additional 30 seconds.
  4. Stir in 2 tablespoons of tomato paste, chili powder, ground cumin, and smoked paprika. Cook for 1-2 minutes.
  5. Mix in black beans and vegetable broth, gently mash the beans. Simmer for 3-5 minutes.
  6. Wrap corn tortillas in a damp paper towel and microwave for 30 seconds.
  7. Lightly coat a baking sheet with olive oil. Fill warmed tortilla with black bean mixture and cheese, fold over.
  8. Bake for 8-10 minutes, flipping halfway through until crispy and golden brown.
  9. Cool for 2-3 minutes before serving with your favorite toppings.
