  • 2 medium Zucchini washed thoroughly
  • 1/2 cup Parmesan Cheese can substitute with cheddar or mozzarella
  • 3 cloves Garlic minced
For the Coating
  • 1 cup Breadcrumbs panko works well
  • 2 tablespoons Olive Oil or avocado oil
  • to taste Salt
  • to taste Pepper
  • optional Paprika or Red Pepper Flakes for added flavor

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and wash and dry the zucchini.
  2. Slice the zucchini into 1/4 inch thick strips and lay them on a kitchen towel.
  3. In a bowl, mix breadcrumbs, grated Parmesan, minced garlic, salt, and pepper.
  4. Drizzle zucchini with olive oil, then coat with the breadcrumb mixture.
  5. Arrange the coated zucchini fries on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  7. Remove from the oven and serve warm with your favorite dipping sauces.
