- In a large pot, bring salted water to a rolling boil. Add the store-bought gnocchi and cook until they float to the surface, about 2-3 minutes. Use a slotted spoon to remove and set aside.
- Heat olive oil in a large frying pan over medium-high heat. Add the boiled gnocchi in a single layer and cook without moving for about 2-3 minutes until golden brown. Stir gently and cook for another 2-3 minutes until crispy.
- Reduce heat to medium, add minced garlic and sauté with the gnocchi for approximately 1 minute until fragrant.
- Add fresh spinach, stirring gently until it wilts, about 2-3 minutes.
- Season with salt, black pepper, and optional red pepper flakes. Fold in crumbled feta cheese and serve hot.
