  3. Slice the cooled potatoes in half lengthwise and scoop out the flesh, leaving about a quarter-inch to maintain structure.
  4. Adjust oven settings to broil, brush hollowed skins with melted butter, sprinkle with salt and pepper, and broil for 7-8 minutes or until golden brown.
  5. Spoon sour cream in each skin, sprinkle shredded cheese on top, and broil for an additional 3-4 minutes until cheese is melted.
  6. Add crumbled bacon, chopped green onions, and a dash of black pepper before serving warm.
