  • 2 large Eggs or flaxseed meal mixed with water for vegan option

  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
For Serving
  • 1/2 cup Sour Cream optional

Method
 

Cooking Instructions

  4. Combine sweet potatoes, onions, eggs, flour, salt, and pepper in a mixing bowl.
  5. Heat oil in a skillet over medium heat.
  6. Scoop the mixture into the skillet, forming patties, and cook for 3-4 minutes per side.
  7. Transfer cooked hash browns to a baking sheet and bake for 10-12 minutes to crisp.
  8. Serve hot with sour cream and fresh herbs.
