  2. Coarsely grate the sweet potatoes into a large bowl filled with cold water.
  3. Remove excess moisture by gathering the grated sweet potatoes in a clean kitchen towel and squeezing out the water.
  4. Mix the grated sweet potatoes, finely chopped onions, eggs, and flour in a medium bowl. Season with salt and pepper.
  5. Heat about 2 tablespoons of oil in a large skillet over medium heat.
  6. Scoop the mixture into the skillet, flattening each scoop into a patty about ½ inch thick.
  7. Cook undisturbed for about 3-4 minutes until golden brown on the underside.
  8. Gently flip each patty and cook for another 3-4 minutes.
