Ingredients
  

For the Chicken Bites
  • 1 pound Boneless, Skinless Chicken Breast cut into 1-inch cubes
  • 1 cup All-Purpose Flour
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Salt adjust to preference
  • 1 teaspoon Black Pepper adjust to preference
  • 1 large Egg acts as a binder
  • 1/2 cup Milk non-dairy can be used
  • 1 cup Canola Oil or Peanut Oil for frying
For the Sauce & Garnish
  • 1/2 cup Sweet Chili Sauce adjust for desired sweetness
  • 1 medium Carrot julienned
  • 1/4 cup Fresh Cilantro chopped
  • 2 tablespoons Sesame Seeds

Method
 

Preparation
  1. Heat 1-2 inches of canola or peanut oil in a deep skillet over medium heat until it reaches 350°F.
  2. Slice the boneless chicken breast into bite-sized pieces.
  3. Combine flour, garlic powder, salt, and pepper in a shallow dish. In a second dish, whisk together egg and milk.
  4. Dredge chicken in flour mixture, then dip in egg mixture, and return to flour for a second coating.
  5. Fry chicken pieces in hot oil for 3-4 minutes on each side until crispy and golden brown.
  6. Use a slotted spoon to remove chicken from oil and drain on paper towels.
  7. Toss the fried chicken bites with sweet chili sauce in a large bowl.
  8. Serve on a platter garnished with julienned carrots, chopped cilantro, and sesame seeds.
