Step-by-Step Instructions
  1. In a medium mixing bowl, combine Greek yogurt, extra virgin olive oil, and lemon juice. Grate in garlic, and season with salt and pepper. Whisk until smooth and creamy.
  2. Rinse and slice cucumbers in half lengthwise, then cut into 1/8-inch thick half-moons. Thinly slice red onion and add to a large mixing bowl.
  3. Add fresh chopped dill to the bowl with cucumbers and red onion. Toss gently to mix.
  4. Pour the dressing over the salad and toss everything together so all ingredients are coated.
  5. Serve immediately at room temperature or refrigerate for 30 minutes for a chilled option.
