Prep
- Wash two medium cucumbers under running water; pat them dry. Slice the cucumbers into thin rounds.
- Chop two bell peppers into bite-sized pieces.
- Thinly slice half a red onion with a sharp knife.
Combine
- In a large mixing bowl, add the sliced cucumbers, chopped bell peppers, and thinly sliced red onion. Gently fold the ingredients together.
Make Dressing
- In a separate bowl, whisk together ¼ cup of extra virgin olive oil and 2 tablespoons of apple cider vinegar. Add salt and pepper to taste.
Mix and Marinate
- Pour the dressing over the combined vegetables. Toss gently until each piece is coated. Chill in the refrigerator for at least 30 minutes.

- Remove salad from refrigerator, transfer to serving bowls, and drizzle any remaining dressing on top.
