Method
 

Prep
  1. Wash two medium cucumbers under running water; pat them dry. Slice the cucumbers into thin rounds.
  2. Chop two bell peppers into bite-sized pieces.
  3. Thinly slice half a red onion with a sharp knife.
Combine
  1. In a large mixing bowl, add the sliced cucumbers, chopped bell peppers, and thinly sliced red onion. Gently fold the ingredients together.
Make Dressing
  1. In a separate bowl, whisk together ¼ cup of extra virgin olive oil and 2 tablespoons of apple cider vinegar. Add salt and pepper to taste.
Mix and Marinate
  1. Pour the dressing over the combined vegetables. Toss gently until each piece is coated. Chill in the refrigerator for at least 30 minutes.
Serve
  1. Remove salad from refrigerator, transfer to serving bowls, and drizzle any remaining dressing on top.
